Yeast Thermolyzer - Inactivation of Yeast
The Yeast Thermolyzer deactivates live yeast through thermal treatment . For this, the yeast is heated to a defined deactivation temperature , then held at that temperature in a holding zone for the specified time, and afterwards the process can be safely continued. Depending on the model, hot water or steam is used as the heating medium.
Typically, 10 seconds at 75 °C is sufficient to deactivate yeast. This destroys the living cell membranes .
Application
The Yeast Thermolyzer deactivates yeast through pasteurization . Waste or excess yeast can be utilized after thermolysis and is a valuable product due to its vitamin B and protein content.
How the system works
1) Heating
- The yeast flows through a special heat exchanger and is brought to deactivation temperature .
2) Stopping zone
- In the holding zone, the yeast is kept at a specific temperature for the set time to ensure deactivation .
3) Optional: two-stage system with heat recovery
For efficient energy use, the system can be designed as a two-stage system with a regeneration zone :
- Step 1 (Regeneration): Live yeast is preheated in a counter-current flow to the already deactivated, hot yeast. The heat from the deactivated yeast is fed back into the process.
- Step 2 (heating zone): The yeast is then heated to the desired deactivation temperature via the heating medium.
