Our dealcoholization system is designed to preserve aroma, taste and product quality while removing alcohol under controlled, reproducible process conditions. In wine applications, the key factor is not alcohol removal alone, but controlled intervention in a highly sensitive product matrix. This makes DeAlcoTec relevant not only for alcohol-free products, but also for targeted alcohol adjustment and the development of new low- and no-alcohol concepts in wine.
Preheating & regenerative plate heat exchanger
The incoming alcohol-containing product is gently preheated in countercurrent flow to the finished alcohol-free product.
Deaeration for CO₂-containing beverages
Pre-process to prevent foam formation.
Evaporation column & falling film evaporator
The product flows downward from the top while alcohol-diluted vapors rise from below - interaction under vacuum removes the alcohol. The less volatile components remain.
Aroma recovery
Volatile aromas that escape with the vapors are separated and returned to the product.
Optional: Alcohol rectification & utilization
The alcohol can be concentrated up to approx. 90 vol.%, for example for other applications or for economical utilization.
Wine-specific value
In winemaking, the focus is particularly on controlled alcohol adjustment - for example to adjust balance, style and market requirements.
