Yeast Propagator - Propagation of Yeast
The yeast propagator is a system for yeast propagation in one or more individually controllable propagation tanks . The number and size of the propagators are designed depending on brewery capacity , process requirements , and customer-specific preferences .
Application
The yeast propagator is used to maximize the viability and vitality of the yeast. Ideal and sterile conditions are created for this purpose in all phases of the propagation process .
Role in the process in the process
- Filling the propagator with yeast suspension
- Mix with fresh wort until the desired amount of yeast and cell concentration is reached.
- Simultaneous ventilation and gentle circulation for homogenization
- Sterile environment in the propagation tank for controlled yeast growth
- Operation possible continuously or in batches
Ventilation & O₂ control
Depending on the design , oxygen or sterile air is used for ventilation.
The O₂ content is constantly monitored by a highly accurate optical OXYTRANS sensor from Centec.
Transfer & gentle yeast treatment
The resulting yeast cells can:
- to be dosed into the wort flow ( fermentation )
or
- are transferred to other propagators (further yeast growth)
All yeast pumps and components are designed for very gentle yeast treatment in order to fully preserve the viability and vitality of the yeast cells.
