Juice Aerator - Juice Aerator

The Juice Aerator is a system for the controlled aeration of fruit juice with O₂ or sterile air . Since O₂ solubility is temperature-dependent (colder = better solubility), aeration is carried out after the juice has cooled. The required amount of gas depends, among other things, on the sugar content, yeast type, and the desired properties of the final product.

Depending on requirements, the Juice Aerator can be designed for manual operation or as a fully automatic system .


Application

The Juice Aerator is used for the continuous and highly precise addition of O₂ or sterile air to fruit juice. For yeast reproduction and growth, as well as for uniform fermentation, the specified oxygen content must be reached exactly.


This is how O₂ injection works in the process

  • O₂ injection via a specifically designed vortex-Venturi injector
  • The injector doses gas as a very large number of very small bubbles directly into the product stream.
  • Due to pressure and turbulent flow , the oxygen dissolves completely and absolutely homogeneously in a very short time.
  • Depending on the design, a control valve may be located at the end of the solution path to keep the pressure in the system constant and above the saturation pressure.
  • Sterile air filter system for disinfecting the supplied gas

Process control (optional / for automated execution)

Automated systems measure and regulate the O₂ content of the fruit juice with the highest precision:

  • Process control via optical OXYTRANS sensor from Centec
  • Dosage is precisely adjusted to the measured juice flow based on O₂ and flow measurement .
