The solubility of oxygen in fruit juice is temperature-dependent. The colder the liquid, the better the oxygen solubility. Therefore, aeration is carried out after the juice has cooled. The amount of oxygen or sterile air to be added to the juice depends on various factors, such as sugar content, yeast type, and the desired properties of the final product. The Juice Aerator can be designed for manual or fully automatic operation. Automated systems measure and control the O2 content of the fruit juice with the highest precision using an optical OXYTRANS sensor from Centec. Centec has decades of experience in developing and manufacturing its own precision instruments for O2 control. Based on oxygen and flow measurement, the amount of oxygen supplied is precisely adjusted to the measured juice flow. For O2 injection, the Juice Aerator has a specifically designed vortex-Venturi injector that doses oxygen directly into the product stream in a very large number of very small bubbles. Due to the pressure and turbulent flow, the oxygen dissolves completely and absolutely homogeneously in a very short time. A control valve can be located at the end of the solution section to maintain constant pressure in the system, above the saturation pressure. The Juice Aerator is equipped with a sterile air filter system to disinfect the supplied gas.
